Roasted Tomato Basil Soup

Ingredients

  • 2 lb tomatoes, halved
  • 1 onion, quartered
  • 4 cloves garlic
  • 3 tbsp olive oil
  • 2 cups vegetable broth
  • Handful fresh basil
  • Salt
  • Pepper

Preparation

  1. Toss tomatoes, onion, and garlic with olive oil and roast at 400 F for 30 minutes.
  2. Add roasted vegetables and broth to a pot.
  3. Simmer 10 minutes.
  4. Blend until smooth with the basil.
  5. Season with salt and pepper.
