    Ingredients

    • 1 package refrigerated double pie crust, top and bottom
    • 7 cups peeled and thinly sliced baking apples, about 7 medium
    • Three quarters cup granulated sugar
    • 2 tbsp all-purpose flour
    • 1 tsp ground cinnamon
    • A quarter tsp ground nutmeg
    • A quarter tsp salt
    • 1 tbsp lemon juice
    • 2 tbsp butter, cut into small pieces
    • 1 egg beaten with 1 tbsp water, for the egg wash
    • 1 tbsp coarse sugar for the top, optional

    Steps

    1. Preheat oven to 425 F and line the bottom of a 9-inch pie dish with one crust.
    2. Toss the apples with sugar, flour, cinnamon, nutmeg, salt, and lemon juice until evenly coated.
    3. Pile the apples into the crust, mounding them slightly, then dot the top with the butter pieces.
    4. Lay the second crust over the filling, trim and crimp the edges to seal, and cut a few slits in the top to vent.
    5. Brush with the egg wash, sprinkle with coarse sugar, and bake 45 to 50 minutes until the crust is deep golden and the filling bubbles.
    6. Cool at least 2 hours so the filling sets before slicing.
