Roasted Tomatillo Salsa Verde
Ingredients
- 1 pound tomatillos, husked and halved
- 1 small onion, quartered
- 1 jalapeno, halved and seeded
- 2 cloves garlic
- One fourth of a cup chopped cilantro
- 1 tablespoon lime juice
- Salt
Steps
- Roast the tomatillos, onion, jalapeno, and garlic in a hot dry skillet until charred and soft.
- Let them cool slightly.
- Blend the roasted vegetables with the cilantro and lime juice.
- Season with salt to taste.
- Serve warm or chilled with chips or over your favorite dishes.
Garlic Sauteed Broccolini
Ingredients
- 1 bunch broccolini, trimmed
- 2 tablespoons olive oil
- 3 cloves garlic, sliced
- Salt
- Pepper
- Lemon juice
Steps
- Blanch the broccolini in boiling salted water for 2 minutes, then drain.
- Heat the olive oil in a skillet over medium heat.
- Add the garlic and cook until fragrant.
- Add the broccolini and saute for 4 to 5 minutes until tender and bright.

Roasted Romanesco
Ingredients
- 1 head romanesco, cut into florets

Steps
- Preheat oven to 425 F.
- Toss the romanesco florets with olive oil, garlic, salt, and pepper.
- Spread them in a single layer on a baking sheet.
- Roast for 20 to 25 minutes until the edges are crisp and golden.
- Garnish with parsley and serve warm.
Fresh Boysenberry Jam
Ingredients
- 4 cups boysenberries
- 2 cups sugar
- 1 tablespoon lemon juice
- One fourth of a cup water
Steps
- Combine the boysenberries and water in a saucepan and simmer for 10 minutes.
- Add the sugar and lemon juice and stir until dissolved.
- Boil gently for 15 to 20 minutes, stirring often, until thickened.
- Test by placing a spoonful on a cold plate to see if it sets.

- 2 chayotes, peeled and julienned
- 1 carrot, julienned

Watermelon Radish Salad

- 2 watermelon radishes, thinly sliced

Roasted Kabocha Squash

- 1 kabocha squash, seeded and cut into wedges

Roasted Delicata Squash Rings
Ingredients
- 2 delicata squash, sliced into rings and seeded
- 2 tablespoons olive oil

- One half of a teaspoon dried herbs

- Preheat oven to 425 F.
- Slice the delicata into rings and scoop out the seeds, leaving the soft edible skin on.
- Toss the rings with olive oil, salt, pepper, and dried herbs.
- Spread them in a single layer on a baking sheet.
- Roast for 20 to 25 minutes, flipping once, until golden and tender.
Sauteed Burdock Root
Ingredients
- 2 burdock roots, scrubbed and julienned
- 1 tablespoon vegetable oil
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- Toasted sesame seeds
Steps
- Scrub and julienne the burdock root, then soak it in water for 5 minutes and drain.
- Heat the vegetable oil in a skillet over medium heat.
- Add the burdock and saute for 5 minutes.
- Stir in the soy sauce, sugar, and sesame oil and cook until glazed.
- Top with toasted sesame seeds and serve warm.
Fresh Microgreens Salad
Ingredients
- 4 cups mixed microgreens
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- Salt
- Shaved parmesan, optional
Steps
- Gently place the microgreens in a wide bowl.
- Whisk the olive oil, lemon juice, and a pinch of salt together.
- Drizzle the dressing very lightly over the greens.
- Toss with a soft hand so the tender greens do not bruise.
- Top with a little shaved parmesan if you like and serve right away.
