Fresh Strawberry Shortcake

Ingredients

  • 2 cups sliced fresh strawberries
  • 2 tbsp sugar
  • 1 tsp lemon juice
  • 4 shortcake biscuits, warmed
  • 1 cup whipped cream
  • Fresh mint for garnish, optional

Preparation

  1. Toss the strawberries with the sugar and lemon juice and let them sit 15 minutes until syrupy and juicy.
  2. Split the warm biscuits in half.
  3. Spoon a generous layer of strawberries and their juices over each bottom half.
  4. Add a billow of whipped cream.

    Strawberry Shortcake

    Ingredients

    • 2 cups flour
    • One fourth of a cup sugar, plus 2 tablespoons for the berries
    • 1 tablespoon baking powder
    • One half of a teaspoon salt
    • One third of a cup cold butter, cubed
    • Three fourths of a cup milk
    • 1 pound fresh strawberries, sliced
    • 1 cup heavy cream
    • 1 teaspoon vanilla extract

    Preparation

    1. Preheat oven to 425 F.
    2. Toss the sliced strawberries with the 2 tablespoons of sugar and set aside so they grow juicy.
    3. Whisk the flour, one fourth of a cup sugar, baking powder, and salt together.
    4. Cut in the cold butter until the mixture looks like coarse crumbs, then stir in the milk to form a soft dough.
    5. Drop the dough into 6 mounds on a baking sheet and bake for 12 to 15 minutes until golden.
    6. Whip the heavy cream with the vanilla until soft peaks form.
    7. Split each warm shortcake, spoon on the strawberries and their juice, and top with whipped cream.
