Honey Glazed Roasted Carrots

Ingredients

  • 1 lb carrots, peeled and cut on the diagonal
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tbsp butter, melted
  • Half tsp salt
  • A quarter tsp black pepper
  • 2 tbsp chopped fresh parsley

Preparation

  1. Preheat oven to 425 F.
  2. Toss the carrots with the olive oil, honey, melted butter, salt, and pepper until evenly glazed.
  3. Spread them in a single layer on a baking sheet so they roast instead of steam.
  4. Roast 20 to 25 minutes, tossing once halfway, until deeply caramelized and tender.

    Ingredients

    • 2 cups grated carrots
