Roasted Spaghetti Squash

Ingredients

  • 1 spaghetti squash, halved and seeded
  • 2 tablespoons olive oil
  • Salt
  • Pepper
  • Fresh parsley

Preparation

  1. Preheat oven to 400 F.
  2. Cut the squash in half and scoop out the seeds.
  3. Rub the cut sides with olive oil, salt, and pepper.
  4. Roast cut side down for 40 minutes until tender.
  5. Scrape the flesh with a fork into strands and top with parsley.
