Quick Pickled Daikon

Ingredients

  • 1 daikon radish, peeled and julienned
  • Half cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • Half cup water

Preparation

  1. Place the julienned daikon in a clean jar.
  2. Warm the vinegar, water, sugar, and salt until dissolved.
  3. Pour the warm brine over the daikon.
  4. Let it cool, then cover and chill for at least 1 hour.
